To preserve this freshness and at same time increase creaminess and mouthfeel, the wine goes through partial malolactic fermentation, which imparts brioche, honey, caramel and nutty aromas. The ageing period into different oak types is the source of the nose complexity adding spices, vanilla and coconut notes.
